Haw Syrup

 

You will need:

 

- 1kg Haws

- 3L boiling water

- 450g sugar

 

  • Mash haws using a wooden or stone implement

  • Boil for 20 minutes

  • Stain then add sugar and boil for a further 10 minutes

  • Cool and bottle

  • As a cold remedy add 1:1 with water, add lemon and brandy

 

Hawthorn Fruit Leather

 

  • Scald haws in a sieve with boiling water

  • Mash with a small amount of water and puree through sieve

  • Spread puree 3mm thick on greaseproof paper
