Haw Syrup
You will need:
- 1kg Haws
- 3L boiling water
- 450g sugar

Mash haws using a wooden or stone implement

Boil for 20 minutes

Stain then add sugar and boil for a further 10 minutes

Cool and bottle

As a cold remedy add 1:1 with water, add lemon and brandy
Hawthorn Fruit Leather

Scald haws in a sieve with boiling water

Mash with a small amount of water and puree through sieve

Spread puree 3mm thick on greaseproof paper

Dry in the oven on low heat or leave in the sun to completely dry
